This is a really cool idea and one that could uncover aspects of Argentina’s economy if you are able to find any significant trends. The idea of using a regression could be a good starting point for your model...I was thinking you could possibly see how the change in prices of the baskets respond to a change in the inflation rate (a concept called an interaction term could be useful here). For initial visualizations, you could create some graphs illustrating the rise of the prices as well as how inflation changes during the same time period.

Derek made solid suggestions. What I can add is: it is often overlooked that inflation disrupts efficiency. So, you can look at the price of essentials basket in real dollars and see how it evolves. Modelwise I think you'd work with time series models since you are tracking the price of one object, the basket, over time. I honestly like your idea #2 better, assuming you have access to individual data. Moreover you can scrape linkedin. Modelwise prediction works smoothly there too. Let me know what you think. I would be curious if there are certain majors that are chosen based on US news or recent events where the student would want to help or fix any issues that are present in the US. Comparing student major decisions overtime could reveal some of this. Something to think about is the international student’s initial perception of certain majors and how their perception could have changed once they opted into the OPT program.
